Birthday Cheesecake

Living with a musician is like living with a vampire. My boyfriend only really comes alive at night when there is music to be played or gigs to be seen at. However, he doesn’t walk in slow motion or talk in a breezy whisper, thank God.  When I first met M at my friend’s house, I didn’t think it would turn into anything because I had a strict rule against dating musicians.  Since my dad is in a creative field himself, I saw how crazy that life could be, but it was hard to deny the buzz that I felt for M. The more we hung out, the harder it was to deny my feelings for him.  After 2 weeks of knowing each other, I started throwing small parties every weekend just so I could be around him.  We would always be the last two, talking till three in the morning.  After all of this, he never asked for my number. Just as I was starting to give up, he called, and asked me to go on picnic for the following week, which was followed by many more cute dates like going for long drives.  I am glad I didn’t deny the buzz that was between us because he has taught me to love unconditionally and has showed me that you can’t control everything in life. Tomorrow is M’s 24th birthday. I asked what kind of cake he wanted. He answered cheesecake, but then got so excited about the thought of it that he added blueberries, cookie dough, gummy worms and bunch of other things. I told him that he should narrow his list of toppings a bit so he decided on a plain cheesecake with just blueberries. His wish, my command. Happy Birthday Sweetie!

Ingredients

  • 1 1/2 cups cinnamon graham cracker crumbs
  • 1/3 cup melted butter
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon all-purpose flour
  • 2 eggs
  • 1 cups fresh or frozen blueberries
  • 1 tablespoon carmel (optional)

Directions:

Preheat oven to 350 F degrees and butter a 9 inch spring form pan.

Combine crumbs and butter in a bowl. Fluff with a fork so that the crumbs are evenly coated with butter. Pat mixture into a 9 inch spring form pan with the bottom of a measuring cup. Make sure the crust goes up the spring form pan. Bake for 10 mins. Set aside. Mash cream cheese until soft and creamy. Gradually beat in sour cream, sugar, vanilla and flour. Beat in eggs one at a time. Fold in blueberries. Pour mixture into the prepared crust. Wrap the pan in aluminum foil to ensure water doesn’t leak into the cheesecake.  Use two or three sheets in a crisscross pattern for best results. Place the cheesecake in a roasting pan and add enough water to reach up halfway up the pan.  Bake in 35o F degree oven for 50 min or when firm to the touch. Cool and remove the cake from springform pan. Drizzle with carmel if you so desire. Enjoy!
