Fruit Salad with Vanilla Sugar and Lemon

6 May

I have to be honest; since I have started this blog, my ass has expanded. I am not used to constantly having cake, cookies or cheesecake in my house.  Every time I look in the fridge there is some kind of sugary goodness taunting me to eat it.  90 percent of the time I give in.  I use to think I had some kind of freak metabolism that allowed me to stay skinny. That was until I passed my full length mirror last night in a pencil skirt. Being only 5 feet tall and gaining 4 pounds, which mostly goes to my ass and hips, makes a difference.  I don’t mind being a little curvy but my ass is going to take over my body soon unless I start eating healthier. So tonight I made a fruit salad with vanilla sugar and lemon. I must say, I didn’t miss the heaviness of a cake or the richness of a cookie. The fruit salad was light and healthy but still cured my sweet tooth. I think this is the start of a beautiful relationship.

  • 1 quart of strawberries
  • 1 mango
  • 1 can of peaches
  • 1/2 quart blueberries
  • 2 tablespoon of vanilla sugar or raw sugar
  • 1 tablespoon lemon
Cut of up the fruit and drain the can of peaches. Combine all the fruit in a bowl and sprinkle the sugar and lemon on top.  Toss and enjoy!
