My Mother’s Apple Cake

I hope everybody had a great Mother’s Day yesterday! I spent the day with M’s family since my mom is in L.A but I sent her some homemade apple cake, which she loved. I know alot lot of people say this but my mom is my best friend. I can talk to her about everything from not so comfortable subjects to the mundane. We also share some of the weirdest inside jokes that crack me up just thinking about them.  From when I was fifteen till I was 17, we had a slightly strained relationship due to an unhealthy relationship I was in.  However, my mom never once gave up on me and didn’t say I told you so when that relationship imploded.  I will always be grateful for the silent force that is my mother.


  • 1 cup whole wheat white flour
  • 1/2 cup all-purpose
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 2 large eggs
  • 1/4 cup canola oil
  • 1/4 cup apple sauce
  • 1/2 teaspoon maple extract
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup chopped apples, skins removed (I used pink lady)


Preheat the oven to 350 degrees F. Spray a 8 inch baking dish with non-stick spray and set aside.

In a medium bowl, whisk together the first six ingredients, set aside.  In the bowl of a stand mixer, beat the eggs for about 30 seconds. Add in the canola oil, the apple sauce and the maple extract. Mix until combined. Add sugars and beat until smooth. Slowly add in the flour mixture, throughly mixing after each pour.  Gently fold in the apple chunks. Pour batter into the prepared baking dish. Bake for 3o min or until a toothpick comes out clean. Enjoy!
