Confetti Sugar Cookies

This post is going to be brief. There are things to do and people to see.  I made these Confetti Sugar Cookies on Friday when I needed a dose of happiness. Sprinkles make everything better; it’s a well-known fact.  And so does butter and lots of sugar, which is why you need to go these cookies.  Enjoy!

Makes 24 small cookies

Ingredients 

  • 4 tbsp (1/4 cup) butter, softened to room temperature
  • 1/2 cup sugar
  • 1 large egg yolk
  • 1/2 tsp butter extract
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup all-purpose flour
  • 1/2 cup colorful sprinkles
  • 1/4 cup sprinkles, for rolling

Directions 

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or slip mat.  Set aside.

Cream the butter and sugar together in a large mixing bowl.  Beat in egg yolk, butter extract, baking powder, and salt.  Add flour, and mix until a dough forms.  Dough will be thick. Gently mix in sprinkles.

Pour 1/4 cup of sprinkles in a bowl. Roll the dough into small balls and roll them in the sprinkle’s. Bake for 9 minutes.
