Spiced Oatmeal Chocolate Chip Cookies

11 Sep

Piece of advice, never be a writer unless you have an incredibly thick skin.  A year ago, I had unrealistic exceptions that once I finished my novel, it would be snatched up as soon as an agent saw it.  They would see the hard work and tears I put in it and the never been done before plot idea but no.

These past week 2 weeks, I have gotten rejection after rejection.  I know in my heart my book isn’t bad but after the fifth flat-out no, you start to wonder.   So to console myself, I made Spiced Oatmeal Chocolate Chip Cookies.  They didn’t numb the pain but they did ease the sting a bit. Enjoy!

Makes 15 cookies

  • 1/2 cup butter, at room temperature
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  •  1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 3/4 cups rolled oats
  • 1 1/4 cups chocolate chips

Preheat oven 375.

In large mixing bowl, beat the butter and the sugars until creamy. Add in the egg and the vanilla, mix well until combined. Stir in the dry ingredients and the spices minus the oats. Then add in the oats and fold the chocolate chips into the batter. Bake for 9 to 11 minutes.
